Tsuyoshi Kato, Ph.D. is a senior researcher at Japan Food Research Laboratories.
His areas of expertise include organic chemistry, analytical chemistry, and food chemistry. His work primarily focuses on the development of analytical methods and qualitative and quantitative analysis of food components, utilizing the strengths of nuclear magnetic resonance (NMR) spectroscopy. He finds great fulfillment when his research leads to new insights into the phospholipids present in food.
