Fabiola Dionisi is a respected industry leader known for her contributions to research and innovation in the fields of food science and technology, and human nutrition. With a remarkable track record of over 30 patents and more than 70 peer-reviewed articles, she has established herself as a thought scientific leader in her field. Fabiola possesses extensive experience in conceptualizing and managing scientific research programs across various business categories. Over the years, she has built a vast network within the related international scientific and technical communities.
Fabiola holds an MSc in Food Science and Technology, an MSc in Nutritional Medicine, and a PhD in Food Biotechnologies. She is also a certified Food Scientist by the Institute of Food Technology (IFT). At the beginning of her career, Fabiola gained valuable experience working in the R&D department of a cosmetic industry. In 1994, she joined Nestlé Research, where she has held various positions such as Project Manager, Department Head, and Network Leader in the domains of Food Chemistry, Food Technology, and Nutrition.
Lipids have been the focus of Fabiola’s research since her PhD thesis. During the years she has developed a complete understanding of lipids in the food value chain, by occupying positions related to analytical chemistry of lipids, sourcing and authenticity, lipid structure and role in food manufacturing, quality assessment of raw materials and finished products, nutrition as well as impact of lipids on human health.
In her current role, Fabiola is dedicated to driving innovation linked to Lipids, identifying groundbreaking science and technology opportunities throughout the food value chain and assessing their potential impact on business.
