Christina Trigka holds a degree in Food Science and Human Nutrition from the Agricultural University of Athens, Greece. She is currently pursuing a PhD at the Institute of Agrifood Research and Technology (IRTA) in Monells, Spain, and is enrolled in the Food and Nutrition doctoral program at the Faculty of Pharmacy and Food Sciences, University of Barcelona. Her research focuses on optimizing processing conditions to enhance the techno-functionality of lupin protein isolates and turn it into a suitable component for the structure and development of meat analogues.
She has prior experience in food microbiology and safety, having worked on projects involving dry-fermented sausages and fruit juices. Her work included microbiological and physicochemical analyses, as well as molecular biology techniques. She has also been involved in projects focused on the detection of olive oil adulteration using chromatographic methods.
