Dr. Shiyang Li is a postdoctoral researcher at the Department of Cereal and Food Sciences, North Dakota State University, working under the supervision of Dr. Minwei Xu. He received his Ph.D. in Food Science and Engineering from Ocean University of China.
His research primarily focuses on developing bioavailable iron delivery systems using natural polysaccharides and peptides to address iron deficiency anemia from both nutritional and molecular regulatory perspectives. In parallel, he is engaged in the functional development and safety evaluation of microalgae-derived ingredients for future food applications.
Dr. Li has published 8 peer-reviewed articles as first author in top journals such as Food Chemistry, Journal of Agricultural and Food Chemistry, and Food & Function covering topics including iron fortification, iron homeostasis, and intestinal health. He has also participated in several national and international research projects and holds 3 Chinese invention patents related to nanoparticulate nutrient carriers.
