M. Sc. Hannes Withouck is a Belgian biochemist and researcher. He obtained his Bachelor's degree in Biochemistry from Odisee and his Master's degree in Industrial Engineering: Biochemistry from KU Leuven. Currently, he is finishing his doctoral study at the Faculty of Industrial Engineering at KU Leuven and serves as a lecturer and research manager at Odisee University College.
In his role as a lecturer, he teaches courses on enzymology, food technology, and kinetics, and is responsible for the food analysis laboratory. As a research manager at the Biochemical Innovation Team (BIT-O) of Odisee, he works on optimizing extraction techniques for polyphenols from apple fruits, apple wood, and pruning waste.His current research focuses on the applicability of apple wood extract as a natural antioxidant in high-fat foods. He is involved in optimizing and scaling up extraction protocols, characterizing the obtained extracts, and evaluating the antioxidant capacity in model emulsions and high-fat foods such as liver pâté and mayonnaise.
