I am a graduate student working in Dr. Kaustav Majumder's lab at the department of Food Science and Technology, University of Nebraska-Lincoln, U.S.A. My research focus is on understanding the impact of maize domestication on its functional properties and nutritional composition. I am particularly interested in the functional properties of maize-derived proteins and peptides.
