Cereal processing end up with quite some volume of by-products such as brans, germs, etc. which contain 80-90% nutrients in the grains. Potentially there could globally produce 62 MMTs rice bran (8%), 24 MMTs wheat germ (3%), and 81 MMTs corn germ (7%). Those by-products can lead to 9.3 MMTs rice brain oil (15%), 2.4 MMTs wheat germ oil (10%), and 36.6 MMTs corn germ oil (45%) as well as 35 MMTs associated proteins. These oils and proteins are very nutritious and functional. This featured session will update the current situation of market, nutritional studies, technological progress, applications as well as future perspectives. The content should be interested for a variety of audience including food applications and the milling industry. There will be 5-6 speakers. The content will cover chemical, nutritional, and applications aspects including recent progress of research advances concerning product development and value chain extending for oils and fats and proteins.
