Laura J. Castellanos-Suarez is a PhD candidate in the Food Science and Technology program at the Ohio State University. She holds both a BS and MSc in Chemical Engineering from the Universidad Industrial de Santander (Colombia), joined Dr. Osvaldo Campanella's lab and Dr. Jimenez-Flores to pursue her doctoral research. Currently, she is developing and evaluating an enriched protein ingredient for the food and feed industries. The ingredient is derived from fermenting acid whey waste and mechanically separated poultry (Turkey) using an extrusion approach.
