My name is Daisuke Isaka and I work for the Nisshin OilliO group, Ltd in Japan.
I belong to the Strategic Invention R&D Technical Division , where I study the oxidation of oils.
My research aims to inhibit oxidation that reduces food quality and to utilize oxidation that improves food quality through the aroma it produces.
In 2021, I completed my Master's degree in Quality Analysis and Assessment, Department of Agricultural Science, Kyoto University.
