Matheus Gouveia is a Research Scientist at the Plant Protein Innovation Center at the University of Minnesota. With extensive expertise in protein and enzyme science, Gouveia develops analytical tools and strategies to improve protein extraction, functionality, and nutritional quality for applications in the food industry. His recent work includes optimizing alkaline extraction methods for navy bean proteins and fractionating pea proteins into enriched 7S vicilin and 11S legumin fractions. He has also contributed to microencapsulation research using spray drying techniques with rice protein hydrolysates to enhance ingredient delivery and stability in food system.
