Neethu Pottackal is an NSF-GRFP Ph.D. Candidate at Rice University in the Department of Materials Science and NanoEngineering under the guidance of Dr. Daniel J. Preston and Dr. Pulickel M. Ajayan. She graduated from Cornell University with a B.S. in Materials Science and Engineering in 2020 as part of the Rawlings Cornell Presidential Research Scholars and Jacobs Scholars Program. Her past research focuses on
biomaterials for sustainable food coatings. At Rice, Neethu’s current interests and research work focuses on 3D printing of food, exploring the intersection of materials, mechanics, and food technology. She is also interested in food innovation and entrepreneurship,
supported by her work as Rice Innovation Fellow and Rice Venture Scholar.
