I am Harshani Vidana Hewage, a Ph.D. student at the Department of Food and Human Nutritional Sciences, University of Manitoba. I received both of my B.Sc. and M.Phil. degrees in Food Science and Technology from the University of Peradeniya, Sri Lanka. My undergraduate and master's thesis centered on nutritional biochemistry and the functional and nutritional properties of underutilized fruits and vegetables. In my Ph.D. research, I am focusing on sustainable protein extraction and modification technologies to develop protein ingredients with improved functionality and nutritional quality from emerging crops as sustainable sources for the alternative protein industry.
