Mursalin Sajib is currently working as a postdoctoral researcher at the University of Massachusetts Amherst (UMass). He received his PhD in Food Science from Chalmers University of Technology in Sweden. After his PhD, he worked as an R&D Manager for several startups, focusing on the development and scale-up of plant-based proteins and seafood alternatives. His primary research interests lie in food chemistry and soft materials science, with a focus on lipids and proteins. Specifically, he is interested in developing fat mimetics, alternative protein and meat products, and scaffolds for cultivated meat applications.
