Dr. Rotimi Aluko, a Certified Food Scientist is a Professor in the Department of Food and Human Nutritional Sciences as well as Director of the Richardson Centre for Functional Foods and Nutraceuticals, University of Manitoba, Winnipeg. He obtained a PhD (Food Science) degree followed by postdoctoral fellow work both at the University of Guelph, ON. From 1998 to 2001, he was a Research Scientist with Agriculture & Agri-Food Canada, Saskatoon. In 2001 he joined the University of Manitoba as an Assistant Professor and became a Full Professor in 2010. His work focuses on the structure-function properties of food proteins and bioactive peptides with special focus on oilseeds and pulses. Dr. Aluko is a Fellow of the Canadian Institute of Food Science and Technology, the Institute of Food Technologists and the American Oil Chemists’ Society. He currently serves as the Editor-in-Chief for the Journal of Food Biochemistry and an Associate Editor for Current Topics in Nutraceutical Research journal.
