Dhruvesh Patel is currently pursuing PhD at University of Alberta (Department of Agricultural, Food and Nutritional Sciences) with Dr Catherine Field in the field of Nutrition and Metabolism. Dhruvesh's research focuses on the role of essential dietary fats and their role in the development of immune system. Using animal model, Dhruvesh studies dietary supplementation of long chain omega-3 and omega-6 fats during early infancy and ways to prevent allergies to food proteins.
