My name is Sayantini Paul and I am a PhD student in the Food Science and Technology Department at the University of Nebraska-Lincoln. My research primarily focuses on legume proteins, peas, and alfalfa to gain a better understanding of their nutritional value and potential health benefits for humans. I am originally from India and completed my Masters in Microbiology.
