Ricard Bou, PhD, graduated with a Food Science and Technology, and Agricultural Engineer degrees. Currentlly working at the Institute of Agrifood Research and Technology (IRTA) located in Monells, Girona, Spain.
Before that, I worked at the University of Barcelona, University of Massachusetts and Spanish National Research Council (ICTAN-CSIC). I have expertise in lipid oxidation in different food matrices, the use of innovative technologies and processes, valorizing food industry byproducts and search for alternative protein sources. This research activity has resulted in over 80 research papers, reviews, and technical publications (see https://orcid.org/0000-0001-5907-7318).
