Yi Chen is currently a Ph.D. student in Food Science at the University of Minnesota. She earned her B.S. in Food Science from the same institution in May 2020. In 2020, she joined Dr. Ismail’s lab as a researcher with the Plant Protein Innovation Center, where she has led four projects exploring a variety of plant protein sources.
Yi has gained valuable industry experience through internships as an R&D intern at SunOpta and CJ CheilJedang Corporation during the summers of 2023 and 2024. In addition to her research work, she is actively involved in scientific presentations and has one publication to her credit.
