Shreevats is a second year MS student at the Plant Protein Innovation Center, University of Minnesota Twin-Cities. He graduated with a Bachelor's degree in Food Science and Nutrition from the University of Minnesota Twin-Cities in May 2023. His M.S. research focuses on optimizing rubisco protein extraction from Alfalfa and characterizing its structure, function, and nutrition, following post-harvest protease deactivation treatments. He has worked as a Quality Assurance Intern with Mars Petcare, R&D intern with Mars Wrigley, and will start full-time as a R&D Food Scientist at General Mills this summer after having interned with them in the past as well.
