Dr. Filiz Koksel: Associate Professor of Food Processing, Food and Human Nutritional Sciences, Faculty of Agricultural and Food Sciences, University of Manitoba.
Filiz Koksel, a food scientist and Associate Professor at the University of Manitoba, specializes in food processing and non-destructive food quality assessment. She holds Bachelor’s and Master’s degrees in Food Engineering from the Middle East Technical University (Turkey) and a PhD in Food Science from the University of Manitoba, where she focused on using low-intensity ultrasonics and synchrotron radiation to study bread dough properties.
After completing her PhD, Dr. Koksel pursued postdoctoral research on sodium reduction in baked goods and wheat quality as impacted from environment, genotype, and management practices. Since joining the University of Manitoba in 2017, her research has centered on sustainable, high-quality plant-based foods, bridging food processing with materials science. Her work includes crop-to-food transformation processes such as milling, mixing, baking, and extrusion.
Dr. Koksel has secured over $2M in research funding as PI or co-PI and co-investigator funding > $3M. She has published 60 peer-reviewed articles, presented her research at 50+ venues, and contributed to the training of dozens of students, including K-12, undergraduate and graduate students, as well as post-doctoral fellows, research associates and visiting scholars.
