ω-3 fatty acids, including stearidonic acid (SDA), eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA), are essential nutrients widely recognized for their health benefits, including cardiovascular protection, cognitive support, and anti-inflammatory effects. In South Korea, the consumption of ω-3 fortified supplements has increased significantly in recent years due to growing consumer awareness and government-led health initiatives. First, this study introduces the current trends in the consumption of ω-3 fortified supplements, the primary sources used for their production, and the impact of public health campaigns promoting their intake. Second, this study introduces recent fundamental studies on the development of new ω-3 fortified supplements conducted in Korea.
