In this session, we’ll discuss the emerging trend in the industrial development of nutritional and healthy lipid and protein products in far ease area. Driven by consumer demand for healthier food choices, both lipid and protein healthy foods has been focused and developed in recent years. Both market trend and industrialization of healthier lipid and protein food would be reviewed.
In lipid part, the structural lipids including diacylglycerols (DAG), Medium- and long-chain triacylglycerol (MLCT) and so on will be elaborated. The protein part will focus on the plant-based alternative proteins.
The session will also highlight the importance of industry-academia collaborations in driving research and innovation in this field, ultimately aiming to enhance public health and well-being through improved food options.
