Abstract: Human milk is the best food for infants and is classified as the gold criteria for infant formula development. In terms of lipids, they are not only the source of energy for baby growth, but also are demonstrated to have very important functional roles in brain growth and other organs growth. Human milk fats are one of the complicated fat systems for their fatty acid profile, triglyceride profile, and polar lipid profile. Like dairy fats, human milk fats have more than 100 fatty acids from latest analytical technology or the number is even bigger from lipidomics study. In terms of triglyceride profile, human milk fats contain a very complicated composition in which sn-2 palmitate triglycerides are dominant including sn-OPO and sn-OPL (O-oleic, P-palmitic, L-linoleic) as well as medium- and long-chain triglyceride (MLCT), etc. The evidence of nutritional functions of these triglycerides has been documented from more and more animal and clinical studies. Polar lipids are also unique in human milk, which are critical for the functions of human milk and are more and more demonstrated for brain health. In particular, human milk has a fat globule physical structure which plays an important role in digestion and delivery, making the digestion and absorption more effective and efficient. The mimicking of the physical structure for infant formula is also important. The talk will be on the latest work done on the subject from the team.
